I'm baking one of my 'tried & true' cakes....a lemon cornmeal cake.

It's in the oven and it's FALLING!

I didn't do anything different than the other dozen times I've made it.  I even had fresh baking powder & baking soda (something I don't usually have.....).

Hope it doesn't show on the outside when I glaze it 'cause I'm going to take it to the patio party tomorrow no matter what.

Only thing I can think of is the nasty Winn Dixie flour I bought.

Clumps.

Always sift it - even to flour the VERY well greased bundt pan.

That's got to be the problem.

Flour can be a problem. That is why it is best to weigh it. Too much or too little flour can cause a cake to sink. Over-beating can too.

Yeah, it tastes fine. I even gave a chunk to my neighbor.....it just looks like heck. Nothing wrong with the flavor.

It looks like over leavening. Did you use self rising. I had problems with self rising. I use cake flour and I have no problems anymore. Hope this helps

I did the same as I always have.

Must have been 'gremlins' in my oven, just messin' with me!

It tasted fine, and all of it got eaten. It just wasn't pretty enough for me to take away and have 'presented' as a whole cake.
