Yum, Imelda....looks great. What is the fried item on the right side of your plate?

I didn't have a clue what I was going to fix for supper...opened the freezer door and there was a rack of ribs! I pulled 'em out at 5 a.m. and tossed them into the sink, they were thawed by noon. Then I opened the package and pulled the silver skin off the back and sprinkled some of my homemade rib rub on, snugged 'em up in plastic wrap and put 'em on a plate in the refrigerator for the afternoon. A couple hours before supper they got whacked in half and put onto a sheet pan, added some Coke and covered with foil. Baked in a 300° oven for an hour or so, then on the grill to brown up and a slather of Sweet Baby Ray's.

DINNER... NOVEMBER, 2014 - Page 6 RackofRibs

I added a baked potato with sour cream & chives and broccoli and supper was done.

Stir fry of onion, peppers, broccoli, snap peas, and a fried pork chop tonight. Yumm! Cooking for one is boring!

a bit of a salt rush, huh?

Well, once it's gone is time enough to cut back on the salt intake.....Other than the cheese, that's one healthy meal!

There was enough roast beef, chicken breasts, loaded mashed potatoes, salad and broccoli salad left over from the wedding that we could feed the whole block for a week. I have a hunch no one will want beef or chicken for quite a while.

Oh! No!.... like a Jennie-O Turkey loaf!

Tina used to buy them for the kids. They just loved them ...

But now, they come sopping wet in gravy. yuck!

They were so nice in the 70's and early 80's... then they discontinued them.

By now, if it were us....the turkey buzzards would be having a feast.

Another thing I do, is grind up the beef, and make / add it to make chili or sloppy joes!

We're going to the monthly 'patio party' get together tonight. It's where everyone brings a dish to share, BYOB and sits around chatting for a few hours.

I'm taking a crockpot of taco meat for "Walking Tacos" ~ individual bags of Fritos, lightly crunched, then open the bag, add a spoonful of taco meat and toppings of your choice. Then ~ walk away! LOL

Tomorrows supper will NOT be welcome by Jimmy!
The plan..... The kids were over a few day's ago having the pierogi's, and son Jimmy Mentioned,"Boy Mom, I wish we could have your bredded and fried chicken breast!" No

Instantly, I felt a (( Holy Crap )) feeling that Tina was gonna jump up and volunteer to make the chicken asap! Yep! I was right! She said, "Good....come over Thursday and I will make you enough chicken to have for lunch at work for a couple days!"

We had two whole breast packs in the freezer, and Tina picked up one more package. All Family Packs; and with like 6 large breasts in each package! .... Dear Lord, what a pile of chicken that will make!!!

I asked her if she wanted me to slice them thinly, and she said NO...I'll do them myself.

Now I asked three different times, and I Know Darn Well, she will wind up kicking her self in the Butt when it's all done! Let me see... 18 slices per package X times three packages = 54 pieces of chicken that has to be breaded, and fried. Logically, How much chicken for only 4 people (Not Me Included ) does Tina think she is cooking for??

I don't mind making it or having Tina cook, but she is Not a 40 year old any more.

I just feel that it is going way overboard in the quantity and all the work that goes with it.
Then son Jim will not eat without Mashed Potatoes, and there MUST BE Brown Gravy for the potatoes.
We love our kids, and would do anything for them. Only I think Tina is setting herself up with way way too much of a task.

We will save some for DD and her BF who are working late that day; but it will be here for them.

Anyway, who am I to say? I will only become the Bad Guy if anything goes wrong after all is over.

I'm not speaking from not knowing. I know what it is to cook, and what is involved in cooking such a quantity of breaded chicken.

I'm sure everything will go well!

"I'm sure everything will go well!"......

That's all that has to be said. Nothin' you can do about the situation and you know it.
