My father used to have his pancakes (after melting butter on top) with squeezed fresh lemon juice and granulated sugar on top. They're really good like this, Jimmy. Brian tried them when I told him and he liked them, too.

So, when my stomach was finally growling, I looked in the refrigerator for something to fix. I saw the leftover corn and thought, I haven't had corn fritters in ages. Easy and a childhood favorite.

Canned tuna, 3 hard cooked eggs, 2 stalks celery and Miracle Whip.
Dane's the type who opens a can of tuna, adds a blob of mayonaise and mixes it up. He had a difficult time getting use to "my" traditional tuna salad. But, when I was growing up, tuna had to be purchased and the eggs were free (chickens in the barnyard). So, Mom always added chopped eggs as an extender.
