Maybe have the stray leftover hot dogs. Tina made Ham & Pea Soup Yesterday, but it will not be a day for Hot Soup!

I do want a nice salad though. Have spinach in the fridge.

hard cook some eggs and fry up a bit of bacon to go with that spinach salad, Jimmy. Adds a lot of protein and a nice 'mouth feel' ~ I usually use a creamy or emulsified dressing with it to get it all to stick together nicely.

How Bout That! Great Minds ( not mine though ) think alike. Tina cooked H/B eggs to make some mac salad, and there are 4 eggs left over. I can make the salad and add the eggs. OR... I can make a few deviled eggs. Love them! Only problem is, I would make 8 halves, and they would be eaten before I could clean up! hahahahaha

Since yesterday I was thinking of sandwich ( Banh Mie, Vietnamese sandwich ), so I'm thawing some beef.. I'm going to marinate it with soy sauce, lemongrass and sesame oil

Happy September!!!
Really hot and humid here...for the entire week, in the upper 80's with very high humidity!!

Stayed in and did an easy meal, but one I have not had for a long time....
shades of fall!
broiled chicken thighs, basted with melted butter....
baked sweet potato
and corn!
Nothing elaborate as you guys do on a daily basis, but honestly, I have not had this since I broke my arm in July of 2012!!
Sooo good!
I need to get back to cooking, but for one person it is very hard.. I went thru my recipes today and I have so many good ones, meat loafs, soup, stews, pot roasts, etc........sigh

We have three to cook for now that Uncle Gabe is here with us! Did I say three??? .... NOT Really!
I don't like what they like, and they don't like what I like, and they don't like what each of them like!! hahahahaha

SOOooo! In all actuality, we cook for one, but Three (3) times. LOL

Yesterday as an example, Tina made split pea and ham soup. What a Face With the humidity now and temps in the 80's, I don't want soup. Gabe doesn't eat soup! So Tina had soup for lunch.
Gabe had waffles with Blueberry;s, and I had two waffles with butter and syrup

Supper tonight... Tina made Gabe Salmon and a baked sweet potato and mixed veggies.
I will have shortly, a salad with olive oil, and maybe a hot dog with chili sauce and onions.
Tina had a piece of a pecan sticky bun...and a dish of macaroni salad she made today.

You may as well say, we eat cooked odds and ends.

Charlie made a pot roast. He didn't have any sides so I bought some green bean casserole, mac and cheese and baked beans from the deli at the store.

See! I was planning on a nice salad (baby spinach ) and the spinach was a week old in the plastic see through container. All wilted and wet, and like smelling like compost.

I flipped it out to see if the groundhog will eat it. Then I made a tomato and cheese on Wheat Bread toast with mayo and lots of pepper. I ate 4 green onions with it. Haaaaaa there I was, eating like a Hog... and a rabbit nibbling on my onions.
Jeepers, I hope tonights dream isn't about Hogs and Rabbits? I better sleep in a cage tonight!

Now That looks mouthwatering good.
Is the beef cut in strips? or Chopped?
Good idea with the shredded carrots. That must give a little sweet taste mixed in?

This is what I'm calling "Little Red Hen" Roasted Shrimp Cocktail.....(you DO remember the story, don't you???)

We caught it, we cleaned it, we roasted it and then EVERYONE wanted to eat it !

Barb - your beans/potatoes/ham (or is it left over pork???) looks so SO good. Now I'm thinkin' that should be on my table soon. I remember the first time I made a big pot of that for supper: a big Dutch oven full of garden beans, fresh dug baby potatoes, a couple pulled onions and some ham chunks. I put the pan in the middle of the table and Dane & DD#2 both kind of looked at one another and wrinkled up their noses. Too bad, I thought. THIS is supper. Eat it or go hungry.

Well, long story short ~ the entire pot was empty before they got up from the table.

Them there are 'good eats' to be sure!

Imelda - your bahn mi sandwiches look fabulous! I love those pickled vegetables. I never thought of making them with the thin sliced beef, thought sliced pork was used....your meals always amaze me with the beauty of 'em. Nice, NICE job!

Cyn - don't you just LOVE those chicken thighs? Man, they have so much more flavor than the dry old breast. I used boneless/skinless chicken thighs for my teriyaki chicken over rice last night. It seems if you braise the meat a bit in stock or whatever liquid it sort of absorbs it and just becomes more and more tender and flavorful. Nothin' at all wrong with that meal you made. Remember last year when Dane was still in Ohio and I was cookin' just for me? It's not that hard. Just takes some planning and you'll get back into the swing of it.

Tonight, in addition to a bunch of appetizers, we had a rack of ribs (baby backs), potato salad and some Southern style creamed corn. Man, that was SO good. I used the OXO Julienne Slicer tool to strip down the raw corn kernels on the cob, then cut the rest of the kernel off the cob with a knife and finally scraped all the 'milk'. I used the 'bundt cake pan in the sink' trick to try to keep some of the mess contained ~ it did seem to help quite a bit but there was still a lot of wiping up to be done with all the sticky corn juices poppin' everywhere.

The creamed corn got simmered in 1/2 stick of butter in a pan for about 15 minutes to cook through with the addition of s&p, some other seasonings called 'Dixie Dust' and then, when cooked, I added a slurry of 1 Tbsp. flour and 1/2 c. half & half. I don't think, technically, there is suppose to be cream added to true Southern cream style corn, but I was following a recipe from one of the local restaurants. It sure was good. Nothing like the canned stuff you buy at the store.

But my method works with what I have so, for as often as I'm going to make it, I think I'll save my $10 and do it "my way".

I had the green beans , I knew I had ham cut up in the freezer.I sauted it with onion,lots of salt/pepper.then added the bean s & chunked potato's,a whole qt of chicken broth.Lid on half way,simmered for over a hour.Corn muffins made in the toaster oven.

I have this huge big restaurant size can of green beans. Tina is going to do them like Barb Did, but is going to make corn muffins to eat with them....

Jeepers.... There's another dream story for me. "Jack & The Bean Stalk!" Oh Dear!!!

You won't be sorry, Barb. My guess is, if you end up with a huge pan of it, you could bag some up before adding the half & half and freeze for later meals.

The messy part was striping down the top of the kernels with the julienne cutter and then cutting and scraping the milk off of the cobs. But, like I said, I put a bundt pan in the sink and it did help contain a lot of the mess and juice.

Had two Dietz and Watson beef natural skin hot dogs with mustard, chili sauce, and minced onions.
Tina mad macaroni salad. It was awesome. I had two helpings of that.
2 Ears of corn, and now just finished a butter crunch dish of ice cream.

Tina had corn, and macaroni salad.

Gabe had a cheeseburger...sweet tater tots, and baked beans. Cake and chocolate ice cream.

Now I shall relax...run downstairs and check the refrigerator. I defrosted it today, so I just want to make sure all is well. Gotta check the temperature to be sure it doesn't freeze the eggs.
37º in the medium temp side is the limit.

It was so hot today. 84º was just way way too hot for doing any work outside.

Looks good Norm. I like the way you cut the red onion. Nice bite size, and easy to fork pieces.
