bethk wrote:All the talk about cottage/shepherd's pie had me ready to put it on the table.  It's been forever since I've made it.  Dummy Me ~ if everything is fresh & hot when you assemble, it is NOT advisable to put the prepped casserole into a 450° oven.  Just turn on the broiler to give the buttered mashed potatoes a little crisp and color.

I ended up with a soupy mess to look at.

Oh, it tasted just fine.  Mr. Amazing was starving so I could have had dog food leftovers and he would have eaten.  But I get so angry with myself when I end up with a messy plate.

As Mom used to say,"It all gets mushed up in your stomach anyway; so open your mouth and eat it!!!"

You Girls Just Wait!!! ..... You wait until the Boys make Shepherds Pie.
Right Norm?? ..... WE WILL show you how to make soup err err I mean Pie!!! LOL
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Well we had the Lebanese food tonight. NOT FOR ME / TINA / GD / DD, son Jim had KFC .... He was the smart one!
Gabe had MacDonalds.
My beef shishkabob was like dry tough Camel Meat! ... I could not cut it. I could not tear it. I could not chew it without making crackling sounds with me teeth.
The rice, was rice. The stuffed grape leaves were OK. GD had waht was supposed to be Chicken Tenders, and they gave her Chicken reconstituted nuggets.
Tina had some kind of pies (looked like pasties) meat pies with hamburger ....and tasteless.
Live and Learn..... They gave 5 pieces 3/4 inch size cubes of bottom round grilled. Tough!
They should have used filet for only that small amount of eatless beef.
I'm not much of a fan of Shepherds Pie. I'd rather have a crust.
Crust like a beef pot pie sounds good Barb.
I still will try a topping of biscuits and cheese though.
Just thought of something..... Anyone remember the mashed potato meatloaf, that was popular in the 60's? Mom made it once, and she added cheese to the mashed potatoes, and then rolled out the meatloaf chopped meat, and spread the potato / cheese mix on top, and then rolled it like a jelly roll. Baked it, and when sliced, the matloaf looked like a jellyroll cake.
Even though it was drizzling, I still grilled the requested bacon-double-cheeseburger for Mr. Amazing.  I was going to do something with the last of the boneless/skinless chicken thighs but they'll hold until tomorrow.  It's unusual for him to actually come up with a reasonable suggestion of what to fix for supper.  (His DID have cheese on it, by the way.....)
Tina went on the church bus trip to Bethlehem ( The Sands Casino ) and had a good time.
She played with their money, and lost only 5 bucks. She played a $20 from DD, and won $50 for her.
At least she had a good time.
At least she brought me a huge Sandwich of corned beef that I can make 3 sandwiches out of the one. They have a Carnegie Deli there.
Didn't eat yet... but in an other hour or so, I will be hungry.
UNCLE JIMMY
UNCLE JIMMY
No more hungry. LOL
I made one plus a half sandwich with the corned beef. Mustard and a pickle on the side.
I just made a batter for yeast raised waffles for tomorrow.
Tina was begging,"Please can we have waffles tomorrow?".....
I said,"Your Wish, is My Command!"
Don't have whipped butter,,,,,,so I was wondering if I could just whip a couple sticks of stick butter at room temperature, and get the same whipped butter???
Great!!! .... Found a recipe.
2 sticks butter softened and 1/4 cup milk.... just whip it with a beater whisk and it will expand. I gotta try it!!!.....
Niagara Visitor
I thought that I posted all this, and then poof, it disappeared into cyberspace.
Yesterday I had potato salad, tomato/onion salad, some pikerel, some bass, some perch, a devilled egg, a couple of stuffed jalapinios, a sausage, some tzatsiki, some veggies and dip, I think a bun, some baked beans, a cinnamon bun, a brownie, and lots of both red and white wine to help wash it all down. OOOPs, almost forgot the seafood chowder I cooked using the carcass of the 12 lb. pikeral that my son caught a few weeks ago.
We had what I call the last hurrah fish fry here on the farm yesterday. About 40 people, some neighbors, mostly my sons' friends who have been coming here for the last 20 + years.
Today, no cooking. Niece who couldn't come yesterday came. We went to the condo, I had bought a baguette and some lovely local cheese so we had that there. Janet and hubby brought me a fabulous house warming gift for the condo. One of those amazing end cut cutting boards that I admired when I saw one at their place some time ago. I could just never justify the expense to myself./ They also brought a lovely smaller cheese board and cheese knife/cutter, so we were able to use them right away
Then I invited them (Niece and hubby) out for dinner to a local Greek restaurant. Janet's father is retired, has moved back to his native Athens. They spent many summers in Greece, so Janet knows real Greek food. She really enjoyed the restaurant.
What a great weekend!
