tenderloin.

How do you cut yours up ?

I like thick chops for stuffing.

I am going to butterfly a section for stuff, roll, tie, grill.

Then maybe some medallions.

on sale $1.78 lb..

great price, Barb.

I like to assemble all the little bits (and cut some if necessary) to wrap and store for something like sweet & sour pork. Then it's a quick and easy stir fry 'cause the meat's already cut up.

I also like to slice some off thin so I can pound into cutlets and make a pork picatta or just a quick saute and some sort of fruited sauce. Since it's lean it's nice to do some thin and cook quick to keep it tender.

Sounds like you are talking about a pork LOIN not tenderloin. Tenderloin is about the thickness of a silver dollar while the pork loin is the size of a long pork chop.
