I saw part of an episode of Sara Moulton making a BLT & Egg pie....looked good to me.

But she did something that confused me.  She put her pie crust into the glass pie plate and then docked it, saying that would allow the steam to be released.  Then she didn't blind bake it, she filled the raw crust with her caramelized onions, bacon, tomato & poured in her egg custard.

Who docks a crust that's getting filled with a liquid custard?  

confused me....

Ok I just looked & did not see where it was docked???

It was during her demo on the program....

Certainly it's not noted in the recipe because everyone knows you don't dock & then fill....editors would have caught that one, I'm sure.

But she did it on the show....even mentioned it would allow for the evaporation to escape....through the filling she poured on top???? I don't think so! LOL
