Dulce de Leche Apple Pie

I made this pie today from Closet Cooking blog and it is da bomb. Here's the link.

Dulce de Leche Apple Pie
(makes 1 pie)

6 cups of apples (cored, peeled and sliced) (I used Cortlands)
1/2 cup dulce de leche
2 tablespoons apple cider
1/2 teaspoon vanilla extract
1/2 cup brown sugar
1/4 cup granulated sugar
1/4 cup cornstarch
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch of salt
2 pie crusts
1 egg white mixed with 1 teaspoon of water


1. Toss the apples in the dulce de leche, cider and vanilla,
2. Mix the sugars, cornstarch, spices and salt in a large bowl.
3. Mix the wet and dry ingredients.
4. Fit one of the pie crusts into a 9 inch pie plate and pour the apples in.
5. Fit the remaining pie crust on top and brush with the egg white mixture.
6. Cover with foil and bake in a preheated 400F oven for 40 minutes.
7. Reduce to 375F, remove the foil and bake until golden brown, about 30-40 minutes.
8. Let cool completely

I figure if I'm messing up the kitchen that much, I might as well bake a couple of things. Larry wanted an apple pie and I'll have the brownies for breakfast with cottage cheese and coffee. I'm taking a break after unloading dishwasher, reloading and doing up what can't be put in the dishwasher. Wiped down counters and kitchen table and I may make another meatloaf later. He has two full days of appointments at the VA on Wednesday and Thursday, so I want to have some stuff in the fridge to warm up for dinner. On Friday we'll be flat out and then another day of appointments next Monday.

You did too much today and got really tired ~ and tomorrow you'll do it all over again and be RE-tired!

I have the latest Whirlpool induction range with Accu-Bake and convection or regular baking. It had a learning curve but I really love it now and it's impossible to screw up fried eggs now. The top doesn't get hot, just warm and the pan gets hot only. You can't believe how freaking great it smells in here, those brownies are so buttery smelling and caramelly good!!! We're eating late tonight as hubs has been in bed all day and I've been baking. So I put in a Kroger's Private Selection Vegetable Lasagna -- they are very good and we get 3 meals out of it for $5.99.

Pea, did you have to purchase new/special size cookware to use on the stovetop?

I've heard the larger burners of induction ranges only operate if the pan is the exact size of the burner.

I love the idea of induction ranges. Not only the ability to get the absolute temperature of the burner but the fact it's only hot when a pan is on the burner. I keep thinking it's something I should think about as my short-term memory fades and especially if I get like my grandpa when he got much older and would turn a burner on high instead of off and walk away.
