but there are some in my family that cringe at the very name "creamed spinach," and others who can't stand the idea of baked eggs ...

sigh ...

My spin on that would be soft boiled eggs on a bed of spinach....and this could only be made better with the addition of a hollandaise sauce, a bit of lemony goodness, to oozzzzzze and mix with it all.

I can also imagine making the creamed spinach a bit more sturdy with kale....

but I think you and I are about the only two who really, REALLY like all the greens.....chard, spinach, kale, turnip, mustard, etc.

Count me in that number, too, Beth, as I've never met greens I didn't like, though I've yet to try kale or chard.

I snagged that spinach with baked eggs recipe, MG, and thank you! But I'll only be making that if we have overnight company, as Brian doesn't like runny eggs of any sort (whereas poached eggs are my all-time favorite). The runnier the egg, the better in my book. Brian also doesn't like greens (what's up with THAT?!) though he recently decided he liked creamed spinach after trying some that was on his plate at a nice restaurant at a business lunch. But if I made creamed spinach and he didn't eat any, it wouldn't bother me in the slightest as I would eat it all myself!
