What Y'all got in mind for the Fourth Of JULY???

Picnik? BBQ? Hang at friends? Lake / ocean /??? Home Cooking...or just chillin?

I have No Clue what the heck will fly in this territory.
Don't know if the kids go to work the day after?? They Don't say.No
I think Jimmy Jr and DIL will be Up in Boston MA; so they may have taken a vacation day for Friday!Wink

Oh Well! If anyone has a clue what they are doing or not doing...be nice to hear. bounce

Don't know yet. We'll be watching fireworks from a friend's house. She lives high atop one of the mountains here and we should be able to see any shows going on. With the drought and fires we've been having, I'm surprised that AZ will have any fireworks this year.

We will most likely be finishing up on rearranging so the auction house can come and get started on their inventory for our August sale. I can't wait for it to be done and over.

The auction is here. Dane thinks they'll have to bring a tent even though we have a 4 car garage. But that's because he's been squirreling away junk, er, treasures for the last 45 years. The garage has a full attic over it and he says its full.....

I'm expecting a bunch of friends to keep me company that day. I told them they could all come but they were on my list of "not allowed to purchase" because none of them need any additional junk at their homes! LOL

when my Mom had one after her husband died.They came & did EVERYTHING. she didn't lift a finger. They told her not to be there.

she lost money big time. I know what that stuff was worth & I was sick about it.


I hope it rains & rains & rains. sorry guys.
I hate hate the fireworks.it goes on for for 4 days all around my house till sundown to 2am.I have to clean up the yard before I let my girls out.

I mean come on,they have places all around town to GO to see them.

I know if it is HOT I will not be grilling nor going out in the heat.

Besides I get so pissed off at what goes on & no one really cares about the real reason for the day.......

There was a letter in the Dear Abby column or some such....woman talked about when JFK was President he started a "ring the freedom bells" program. I barely remember reading about it (I was 13 when he was killed). But it's a neat idea and makes so much more sense than shooting off all the fireworks and the rockets, etc. I know Huckleberry wouldn't be nearly as scared to go outside if there wasn't all that racket going on. For a big dog he sure is a scardy cat.

Fireworks are all illegal in New Jersey. But it's ok to cross the Delaware River into Pennsylvania, and buy them there. Here is the kicker. Pennsylvania is Not Allowed To sell to People registered in their own state; so if we drive to the fireworks depot in PA, all we do is show our NJ driver license, and they will sell us anything. Talk about twisted laws.

I think that is the law in a lot of places...same around here. IF I wanted big (dangerous) fireworks I would have to drive 10 minutes to cross the Ohio / Michigan border and purchase in Michigan by showing my Ohio drivers license. And I'd be passing the Michiganders going in the opposite direction to purchase their fireworks in Ohio......

And to boot all heck! The whole neighborhood is lit up and boomed out with sky rockets and noise from the explosives, and the cops turn their backs.
One year, the kids got a bunch of some really loud ones, I know them as M-80's or Ash Cans, and rgulay firecrackers. We were in the back yard (yes...we...ME Too) The turned into a kid and to supervise, and Oh Oh! There on the side of the house is the Lady Cop standing with her arms folded. Wow! she said,"Got some really neat stuff there!" I'm gonna ask if you could put them away because a neighbor called in, and said his kids and family are all shook up from last years 9-11 attack on the World Trade Center Buildings! She just walked away, and didn't even confiscate the fireworks!
She said,"What am I gonna do?" I just have to try and keep the peace!

In New Orleans, they shoot fireworks from two barges in the Mississippi River behind the French Quarter.  Luckily, we can see the whole show from our balcony.

They're illegal in N.O., too, but like y'all, not in the surrounding parishes (counties).  Lots of people shoot them from the levee in front of our house.  It's really noisy and they leave a lot of garbage.  We don't say anything nor call the cops but most of them shoot them towards and river and not towards the houses across from the levee like ours.  

One year a bunch of people (adults, mind you) were shooting them towards the houses.  Most of the houses here are over 100 years old, some much older than that.  They'd go up like tinderboxes so I hollered over to them, asking them to please shoot them toward the river instead of towards our house.  Unbeknownst to me, Brian had gone out on the balcony and asked the same thing.  Well, they didn't say a word but kept shooting them towards our house.  Both Brian and I called the cops.  They left pretty qucikly as they probably assumed we were going to call the police.  

We never go out anymore on July 4th or on New Year's Eve, as I'm afraid some jerk will burn our house down!

I'm scared to death of them as a firecracker -- thank God it was a very small one -- blew up in my hand as a kid.  It didn't do any damage except for traumatizing me but my hand was black with gunpowder and I thought it was burned.  I felt so sorry for the man whose house we were at, as he'd bought me an entire case of sparklers since I was so little.  Hard head here had to shoot a firecracker and brilliantly chose one with a very short fuse.  Recently, I saw on Dangerous Catch (or whatever it's called) where one of the deckhands exploded an M-80 in his hand.  He not only tore open the palm of his hand but it broke a bone in his arm, which jumped on top of the other bone in his arm.  Ugh!

Wow! That is scary. I had a tarp over the back section of the house roof one year, and was waiting for a nice day to do a new roof. The kids nextdoor must have shot bottle rockets, and there were 5 holes burned through the blue tarp material.

what I really want would be fried chicken,potato salad,corn on the cob,baked beans,My Killer mac salad .apple pie with real vanilla ice cream on top..

what I will have is most likely a grilled steak with boring veggies. Big salad on the side.This may sound bad BUT I sure hope I have NO company!!!!!

I know potato salad is a L O T of Carbs, but I would wonder if making cooked cauliflower and adding the onions and celery and we use HB eggs and mayo would be a good substitute for potato salad??? Tina's uncle is a diabetic and won't eat potatoes. Maybe a small sweet potato once in a while. My Daughter makes mashed cauliflower as a substitute for mashed potatoes. I tried it, and it was ok texture wise, but she added garlic to it! I LOVE garlic, but NOT in potato salad. Just like I love all kinds of olives, But NOT on Pizza, or in any cooked dish!I don't know what would be used to substitute macaroni salad though?? I know they have Low Carb Macaroni, but it doesn't taste the same as regular! To me anyway!
Tina buys that Dreamfields spaghetti, and I eat it, but it doesn't have that taste of Ummmm!

We're going to the cousin's for a cookout tomorrow evening and then watch the fireworks set off in their city from in the middle of the stone quarry...far away from any homes or vegetation.

I have to come up with something to make...and I'm so tired its as if my brain won't function. I have some smoked sausage in the refrigerator so maybe I'll think of something to do with that. I also have a few yellow and green zucchini...maybe that will get used. I don't know. Usually I have a plan in my head but nothing is calling to me. I think I need a nap, yeah, a nap sounds good.

No Poor Beth! Don't worry Beth...I'll do the thinkun fer ya!

Now...I would make, a Nice "Zucchini and Sausage Cacciatori!"
Brown the sausages well, and then cut them in chunks on the bias. Wash and do the same with the Zucc's. Boil ( Pre Cook ) some potatoes to soften, and cut them in 1/4r's and sprinkle with papprika so they will absorb the red color and taste . Assemble the casserole with all that and a can of crushed and seasoned tomato sauce or crushed tomatoes. I would do crushed tomatoes. Bake for 45 minutes at 350º oven, and then add some cheese on top and continue to bake for a period watching just to take out when the cheese is just melted., and then all you have to do, is reheat to just warm when it's time to eat.

They look scrumptious Barbara.

Tomorrow for the 4TH...I have my pizza dough all made and proofing in the fridge!
The sauce is made and all the toppings are sliced and diced!

The stuffed mushrooms were a huge hit...cooked in a foil covered piepan on the grill. A bunch of the filling oozed out of the mushrooms and we just scooped it up to eat on crackers. Bacon. Cream cheese. Chives. Red pepper flakes. All good stuff!

Charlie is planning to grill kalbi today. I think I'll do this recipe

8 C. strawberries, hulled
6 T. gran. sugar

Shortcakes
2 C. AP flour
2 T. gran. sugar
2 T. packed brown sugar
1 T. baking powder
1/2 tsp. salt
6 T. unsalted, cold butter cut into small pieces
2/3 C half & half,+ extra for brushing
1 egg
Sparkling sugar

Topping
2 C. heavy whipping cream
2-3 T. confectioners' sugar, to taste


For berries, slice, sprinkle 2 with 6 T. gran. sugar. Set aside, stirring occ. 30 min. until juicy.

For the Shortcake: Preheat oven 425º, place rack in center. Line baking sheet with parchment paper.

in large bowl, whisk together flour, 2 T. granulated sugar, brown sugar, baking powder and salt. Cut in cold butter.

In a small bowl, whisk together half & half, egg. Stir in flour mixture until dough comes together in a sticky mass. Turn dough out onto a lightly floured surface and knead lightly until it comes together, about 30 seconds. Dust the counter with a bit more flour, then pat dough into a rectangle about 1/2-inch thick. Cut into rounds with a floured 3-inch biscuit cutter, pressing straight down, don't twist until all the way to the bottom. Twisting can seal the layers, leading to a dense shortcake. Then place them upside down on a baking sheet (helps ensure the highest rise). OR cut into squares with a knife. Gather scraps, knead briefly and cut 2 more rounds. Brush with half and half and sprinkle with sparkling sugar. Bake 12 -14 minutes, until golden brown. Cool on wire rack.

Assemble: Combine cream with sugar and whip until stiff. Slice each shortcake in half. spoon portion of strawberries on half, top with dollop of whipped cream and cap with other half of shortcake. Serve immediately. Shortcakes my be frozen for later use. Reheat on baking sheet in 350º oven 10 minutes.

we are pretty much done for today.. a friend and her family came and joined us for lunch, her husband and my DH ate Sloppy Joes.. she and I ate our Indonesian style noodles ( I made the noodles too).. I really hope there wont be any fireworks in my neighborhood Evil or Very Mad ...  everything around the houses are dried out.. the trees, the roofs, the weeds... it's so dangerous to play with fire in this extreme heat Evil or Very Mad
