I wonder how pimento cheese spread would be without the cheese???

Actually, I've considered making it with just cream cheese because I think the color is so pretty.

It's like adjusting a recipe for cheese grits without cheese....or cheese straws without cheese.

Down in the South they use cheese on or in just about everything! LOL

Gotta tell you guys that I'm born and raised in N.O. and have never had pimento cheese dip!  Nor have I seen it at a party either...

When we had to go to my brother's for a family funeral in Warner Robins, Ga. The friends and neighbors must have brought six bowls of that stuff.

IF I liked cheese I could imagine making little grilled cheese sandwiches with the stuff as a cocktail party  nosh.  Or you could use it to "stuff" celery for a cool snack.
