Since I had an early breakfast and not my usual mid-morning brunch, I found I was in need of some nourishment to get me through the day....

I rumaged around the refrigerator and came up with some things I could toss together for a protein packed chicken salad: A little leftover chicken breast, a hard cooked egg, celery, onion, sweet pickle relish, a chopped dill pickle and my Miracle Whip, all topped off with a bacon garnish. Notice I didn't show you guys how I intend to use the romaine as a "bun" ~ not a pretty picture to watch but a tasty way to get it down!

I've got a couple Sabrett hot dogs on the grill charring up - I'm going to finish up the sauerkraut with them.

(I don't think I need to post a pic....two hot dogs on a plate with a side of kraut & a dab of mustard ~ you know what that looks like. LOL)

I forgot all about taking a pic of my lunch today...and it was pretty unique (for me). That's translated into: I've never tried this but why not???

I looked for something in the refrigerator. I had one hard boiled egg. (geesh - I think I'm probably going to OD on eggs, and they're probably not good for me when I eat 3 in one day....oh well, easy come, easy go).

I thought I could make a quick egg salad for my lunch. I cut up a stalk of celery and then grabbed the jar of pimento stuffed olives...hey, I saw egg salad w/olives on the menu at The Cotallion restaurant. I mixed the chopped celery, chopped olives and chopped egg with a tablespoon of MW and a dash of my Tennessee Sunshine Hot Sauce.

I cut an English cucumber in half and then halved it lengthwise. I used a spoon to scrape out the seeds and watery interior to give me a space to pack in my egg salad.

So - my lunch was Stuffed Cucumber with Olive Egg Salad.

It was really tasty and something I'll make again.

Barb, we must have some Italian running through our veins...we both love the colors of the Italian flag when we make a meal!

Light lunch today ~ and it was really, REALLY good! (I should say it was almost a "dessert for lunch" day 'cause that's what it tasted like!

your lunch looks so good Beth... but I don't think my stomach'd satisfy with it tongue since the temperature is going up and up now, every evening we have a big glass of frozen fruit juice for our supper, banana + strawberry, banana + mango, banana + papaya, or whatever fruits on sale... for my DH's lunch or brunch usually light ones, some veggies with tortilla, or omelet with veggies, I'm good with a cup of coffee and some cookies until dinnertime, usually at 3 or 4 pm.. here is lunch for my DH I made lately

Actually, Imelda, with a good 1/2 cup or so of yogurt and the fruit, I'm pretty satisfied because of the protein. If I had just had fruit then I'd be hungry within an hour or so...at least that's my experience.

As far as the tortilla filled with vegetables and cheese goes...I would LOVE to grab a warm tortilla. Boy, I do love a nice soft warmed tortilla wrapped around some leftover chicken and vegetables! I don't do the cheese, but some leftover meat with the vegetables is good enough for me.

Today we had a lunch of this 'n that....

We went to the grocery store - he saw olives with feta ~ HAD to give that a try. (I got just a few of mixed olives and those sweet/hot picceo (sp?) red peppers - yum!). They had fresh shrimp on sale - got half a pound or so for $3.63 that I cleaned & steamed. We're both full and it was no trouble at all. I think Dane's gonna enjoy his week off. He can't believe I'm not nagggggging him to do this, do that, something else needs to be done. I really do want him to have some time to relax and rest his old body. Gotta give him something to look forward to when he retires in February.

Didn't he just have spaghetti for supper last night? I'm surprised he didn't want you to make chicken fingers...that's my #1 request....not store bought, homemade ones....and LOTS of them, lol.

I usually have one boneless chicken breast that I cut into strips and freeze between plastic wrap in a single layer that I can thaw in minutes. Then, when I get the request for after school snack or a fast supper I can dip in panko and fry....yum! (Thanks, Grandma!)
