I've been cleaning up on all leftovers. Today should be a wilted carrot and onion skins.....

Breakfast for me was a fried ham and egg with yellow cheese, on an onion Lenders Bagel.
toasted lightly, and buttered. ( God forbid I should forget to butter my bagel! )

Lunch was Panera,s Cheddar Broccoli soup with their crusty bread..

Enjoyed the waffles from the new Belgian waffle maker.
The only thing, is they took a long time to bake. ?  Maybe I needed to preheat it longer??
I have to check it out.

I usually end up tossing the first one.....until I get used to how a new appliance cooks.

I was away for a few days, family b-day. I made a delicious strata for breakfast. For the first time, I used bagels for the bread. Bottom layer was jalapeno and cheese bagels, then a layer of chopped ham, a layer of sauteed mushrooms, then a layer of plain bagels. Then the standard mixture of eggs, milk, cheese. Bagels made it a little more dense than plain bread, but really tasty.

That sounds good Lore! What kind of cheese did you use?

Monday Morning will definitely be an egg omelet. Lets see!...

I need to make a three egg omelet for all the fillings I like to tuck into the egg pocket. LOL
I add flour and a pinch of baking powder as I scramble the eggs; milk, and a little olive oil. ( tsp ).
I want minced ham, cheese, and scallions chopped. Some sliced and fried mushrooms; with black pepper. Crescent rolls to eat with it. I will prep everything tonight.

Sounds like a good idea, Lore. I saw the other day, I think in a magazine but it may have been online, where a woman crushed up English muffins to use as crumbs to top a casserole. I thought that was a good idea, too.

We almost always have both bagels and English muffins in the house, too.
