Some of you may know that I HATE tempering chocolate. It's not hard, but it's a PIA, and sometimes it's perfect and other times, it falls out of temper while I'm making stuff.
I received a sousvide for my birthday and am trying stuff out. I've been reading up on this and found that it's supposed to be a great way to temper chocolate. So....I'm going to try it.
I'll write up my experiences when I'm done, but with the holidays coming up, this might be helpful for those of you who have a sousvide machine.
