Last night we had the last of the leftovers.....sloppy joes and corn and the green bean/corn saute. Then Dane drove to the airport to pick up Robin, Ben & Jacob (I stayed home as my car only seats 4 people.....).

Tonight we'll have pork & sauerkraut w/spaetzle ~ by special request. Unfortunately, Ben doesn't think he's a sauerkraut lover but he says he's more than willing to give it a try. Since I 'mild down' the sauerkraut with half a head of shredded fresh cabbage and it braises in the oven for 3 or 4 hours with the pork, I have a feeling it'll be much better than what he's experienced before. If not, I can always offer him a grilled cheese sandwich or something else.

Well, I don't have a main dish for you but this is something that is ABSOLUTELY DELICIOUS! We've been making this for years. In fact, the guy who posted it on the Virtual Weber website had made changes to his original recipe that he mentioned throughout the thread so I went back there today and reposted Doug's revised recipe, adding in all his changes. Whatever you do, if you make it for a group, make sure you hide some in your fridge for you for later, as there will be nothing left. Absolutely delicious.

Smoked Mushroom Dip
Recipe by Doug D on tvwbb.com (The Virtual Weber Bulletin Board)

8 oz. thickly sliced fresh mushrooms, smoked
12 oz. Whipped Philly Cream Cheese
8 oz. Sour Cream
1/8 teaspoon garlic powder
1 teaspoon onion flakes, ground
1 teaspoon kosher salt
Freshly ground black pepper
2 small chunks hickory wood

Butter a small 10x14" baking pan, and spread mushroom slices out in a single layer. Add fresh ground pepper to suit. Place in 235-250° smoker, add smoke wood, and smoke for 75-90 minutes. The slices should be cooked, but still slightly firm. Remove and allow to cool, reserving any juices and adding them to the dip. (During a rib cook, I set the pan on top of some foiled ribs, and just threw the wood on top of the coals.)

In a 6-cup bowl, thoroughly combine everything but the cream cheese and the smoked mushrooms in the bowl first, and then fold that mixture and the cream cheese together. Chop smoked mushroom slices coarsely (1/4" - 1/2" pieces), and fold into base mixture. Refrigerate and allow flavors to combine for at least a few hours.

For a thicker, chunkier dip, reduce sour cream to either 4 or 6 ounces, starting with 4 and adding as desired.

Note from me: We’ve made a double batch with 16 ounces of sliced mushrooms and so had to layer some of the mushrooms in the pan for the smoker – it made no difference and the recipe still came out divine. We also usually add a bit of cayenne and about 1/8 teaspoon of Tabasco to the original recipe; sometimes we use red pepper flakes in it instead of the Tabasco.

Robin and Ben are flying back on Monday mid-day. Jake will be with us for the whole month. We tried it for the first time last year and it worked out well that his mom got a 'break' and his dad didn't seem to mind, either. Usually we would have to have him home by the 28th or 29th of July (his dad's birthday is July 29th) but this year his dad and step-mother will be on vacation so it's fine with them if he just stays. So, it all depends upon when Dane wants to drive up. Dane does maintenance on our house and paints & fixes stuff so nothing gets out of hand without us being there to keep an eye on it. Robin does a good job but it's not her house and she's not got the experience we have after 45 years.

I'll stay home and then fly up for a weekend to join Dane when he goes to his high school 50th class reunion ~ but I only have to be there from Friday evening and return on Monday....short stays is good enough for me.

Y'all are really smart about the maintenance. You'll be all set to put it on the market when Robin moves out. Robin's lucky, too!

Wow -- Dane's 50th! Mine will be in 2021 -- I'll be tickled pink if I'm still alive in 2021. A couple girls I graduated with (one I still see once in a while since high school, a gifted artist who supports herself with her art) asked me at Charlotte's funeral if I would be going to the 50th reunion (I only went to the 10th so far). I think I said much the same thing about living that long but then they both howled when I said, "If I still look pretty good, I might consider going!" The other one is married to a hairdresser who used to cut my sister's hair; they got friendly over the years and would usually show up at the SPCA fundraisers when Charlotte was on the Board of Directions and then when she ran ARNO (Animal Rescue New Orleans) after that.

Both Jan, the artist, and Karen were in my homeroom and thus in most of my classes throughout the four years. Jan talked me into going to my 10th reunion, and I'm still gunning for her over it!!! The girls who were bi*ches back then were women who were still bi*ches! Which is why I never went back; Lord knows I'm not alone. Our class was 128 people and I think about 50 women actually go. Brian made me laugh at that 10th reunion, as he said, "Boy, you sure didn't go to school with many bad looking women, did you?" Then, when Jan came in and was signing in at the desk and getting her name tag he said, "Wow! Who is THAT?!" She still blushes when I repeat it. She's pretty but unusual looking pretty -- kind of exotic looking to me, and she's also one of the nicest females I've ever known. A real doll. Has gotten even prettier as she's gotten older, too.

I have one of her pieces on my wall which I purchased at a gallery; she conned the gallery owner into splitting a 20% discount for me as her work is not cheap; she works in mixed media and does abstracts. I have a second piece she made me as a delayed wedding present. I love 'em both. That gallery show was the first time she did smaller pieces, as most of her work is really big. My sister bought a lot of her larger pieces but Charlotte had an ad agency that focused on printed media and she traded with Jan -- design work, negatives, and printing for invites, and various printed pieces she needed over the years. Plus Charlotte had more money than I did, too! She could afford them. Most all of Jan's work is really big. She got a commission about 10 years ago from the Swiss Hotel in Chicago and has a HUGE piece there in the hotel, maybe 30 feet by 50 feet or bigger. I went to her studio to see it in progress as I could not wrap my head around how she worked on such large pieces. She is so talented and terribly interesting, too.

How about the rest of you? Does anyone go to their high school reunions? Or did you go at one time? If so, how did it go? study

That all sounds great Beth! Jeepers! I was just thinking. Maybe you should pick up a little airplane; something that Dane could fix up. That way, you can fly up to OH and back for those short little trips.

Supper was a ham & cheese on a roll with tomato and lettuce & onion from the Piggy's Deli. No cooking today. It was 83 an hour ago, but after the rain....it cooled to 73.
Tina cleaned out the closet in the bath room today. Bags of stuff. Old shampoo's that separated.
Toothpaste from 1992. Brand new. B O X E S of it!
Today, I did diddly squat! Paying all the bills, and resting my knee!

Well, supper was great! When we sat down Jake was sitting to my left (at my round table) and I handed him the serving bowl of the spaetzle and said, "This has to serve all five of us. If it gets to MY plate (NEXT to him) and there are only 3 noodles, I will be really angry......" He laughed ~ but he knew he couldn't just serve himself half the bowlful onto his plate......and, yes, I've seen him do just that! Hahahahaha.

Robin served Ben a small serving, trying to keep most of the sauerkraut separate from his noodles and pork, to give him a chance to try it. I was sitting across the table from Ben and I didn't want to stare at him as he ate and then ask, "Well, what do you THINK?"......so I just sat and ate my dinner. Ben tried a small bite and then just ate his meal and turned to Robin and smiled and said, "This is REALLY GOOD!" and went in for a second serving immediately. We all laughed and then started to discuss the difference between just warming a can of sauerkraut in a pan or braising the sauerkraut for a long time and allowing the meat to flavor it and mellow it out. Also, as I mentioned earlier, I did add a half a head of thinly sliced fresh cabbage to the pot (with the sauerkraut) to also mellow out the flavor a bit. He seemed to really enjoy the meal and discussed how it would be good cooked with bratwurst or kielbassa ~ he likes to cook and you could tell he was trying out other tastes in his mind. LOL

It was a nice meal and it's been fun getting to know him more. He and Robin seem to be a good match and he's certainly caring and considerate with Robin and also with Jake, who at 14 can be a PITA at times, but that's normal as far as I remember. Lawdy, his mother was almost the death of me when she was a teenager! But ~ she turned out pretty darn good and I'm sure Jake will to, especially with the support of his mom and Ben.

I'd make a big old smoked sausage or hot dog on the grill and then pile up a big sub bun with mustard, onions & sauerkraut....yum.

I just finished making scotch eggs. Last night I made some mango ice cream. The mangoes were not really ripe and so it isn't as good as it could have been.

Beth, I just KNEW he would like your cabbage. Brian was the same way about sauerkraut when we got together -- he'd only had it right out of a can. All I have to do is fry up some bacon pieces, add some onions and fresh garlic, put in some well-rinsed sauerkraut and he's all in.

I think if he would've grown up down here, he'd eat a lot more vegetables than he does today, as there's only a few veggies people make that aren't jazzed up with onions, garlic and some type of seasoning meat, be it bacon, tasso or ham. And of course there's a joke that just about every household has a container of bacon grease on hand; we keep ours in small pint canning jars in the fridge! I think his mom just served them plain.

That's so great that Robin met someone so nice. Super for Jake, too. I know his dad's still in his life but it's nice for him to see his mom in a happy relationship, you know? Plus, it's nice for him to have a man in the house all the time, too. It makes me feel good for all three of them. Nice Ben likes to cook, too -- not only is there another cook in the house, but I think it's good for kids, especially sons, to see a man cooking and doing things around the house as well. Their moms can tell them and show them what she expects but I think a man has more of a tendency to help out with household chores and stuff many used to consider to be "women's work" if they've grown up seeing their father or their stepfather help out around the house.

This cracked me up, too, Beth, as I felt like I was sitting right there with you guys! It's nice Jake likes to eat, too! Make sure you tell us what the first dinner he asks you to make is -- I remember from his last visit that he had his favorites.

Hahahaha....the pork and sauerkraut WAS Jake's request! He loves that stuff. I have enough leftovers for another meal (Jake's is already 'assembled' with the leftover noodles on top so after it's reheated in the microwave all I have to do is flip it upside down on a dish and it's ready to eat). Dane will have to suffer and have his leftover pork & sauerkraut with some reheated mashed potatoes I retrieved from the freezer. MY family ate pork & sauerkraut with mashed potatoes, not drop noodles ~ so it'll be like I'm 18 all over again!

Dane, Robin, Ben & Jake all went to the beach. They stopped in Palatka and his sister followed in her truck to join them. I got to stay home alone.....man, it was heaven! I did some laundry, vacuumed the floors, took a long shower and then just vegged out in the LazyBoy for a few hours. I just got a text from Jake that the beach was good and they're on their way to my favorite restaurant (Musselwhite's) in Palatka for the best fried shrimp in Florida! I'm glad because Jake loves it, too. It'll be good for Ben to get a taste of real southern coastal cooking.

THAT's funny -- the boy came in requesting a favorite! My kind of kid for sure! You're a good granny, Beth -- having it all set up for reheating in the nuker.

Glad you enjoyed your afternoon, too. It wasn't exactly all leisure time but with 5 in the house, I know I would've enjoyed my half-day of solitude as well.

Dane made himself a Greek Salad to go with his pizza. I just had pizza. And Jake's pizza was just cheese ~ but it was gone by the time I took my pics. Hahahahaha ~ the human vacuum! He also had the leftover pork & sauerkraut. He should be good for an hour or so.

I'm trying out a different recipe for bread pudding, one using a can of condensed milk.  Brian went to the naval base to pick up a few things -- the grocery was closed but the other store, the one selling cigs, beer, liquor and "stuff" (he picked up a new toaster while he was there), and he said it was really crowded.  He was just leaving the base when I phoned him; he didn't sound too thrilled as you could tell he knew I was going to ask him to bring something else home. I told him if he stopped at the convenient near our house, the one that makes po' boys, and picked up a bag of their French bread pieces and ends from the loaves (a big bag, more than you need to stuff a 9x13" baking dish is only two bucks!), I would make bread pudding.  His entire voice changed from the one he used to answer the phone.  Just took it out of the fridge, as it had to "soak" for an hour prior to baking.  Looks good but it might be TOO sweet, as it sure had a lot of sugar in it.  No such thing for Brian, of course.  And I made some whiskey sauce for it, too, so he's all in!

Defrosted leftover stuffed bell peppers (the ones we baked on the Weber using pecan wood several weeks ago) and they're in the oven as well.  Planned to make a bean salad to go with it but I ran out of time.  I made a nice tossed salad instead which will have to suffice.  I'll put the bean salad together tomorrow morning so it can chill for several hours in the fridge, a must if it's going to be good.  If I'm not in good enough shape in the morning to begin early enough, it will be the old standby, macaroni and cheese.  

Nothing really special for the holiday but we'll make the smoked mushroom dip tomorrow; we might throw something else on the smoker, too, unless he just makes a small fire for the mushrooms.  We're all about what we feel like doing if it's just the two of us, as you can tell.

He made his and helped with Grandpa's.....He liked playing with the dough. I did the cooking (putting them on the grill) because by that time he was back to his computer game and it was probably boring. LOL

I was in the mood for a Cobb salad but left out the avocado because Charlie has developed a great distaste for anything with avocado. I grilled chicken thighs instead of white meat.
