Baking for a church bake sale today, so I thought I'd share this recipe. These are great biscuits, you'd never guess that they are GF.
Ingredients:
1/3 cup rice flour
1/2 cup tapioca flour
1/4 cup potato or corn starch (I like potato)
1 tsp. xantham gum
2 tsp. baking powder
1/2 tsp. salt
1 TBSP sugar
2 eggs
1/3 cup oil
1/2 cup milk
Method: Sift dry ingredients together, whisk wet ingredients., then combine the two. Mixing by hand works better than using a mixer, as the dough climbs up the beaters in a few seconds.
Bake at 375 until tester comes out clean, about 15 minutes.
P.S. I get 7 or 8 biscuits from this using two spoons to put them on the baking sheet.
