He didn't even complain about the toasted bakery roll (not part of the recipe but what I wanted!).  I told him if he wanted to keep his meal at under 350 calories he could skip the roll but I guess the meal was still within his total allowable calorie count even WITH that delicious hot & toasty bakery roll.  LOL

I do not cook very much.. a lot of simple stuff.. If I was not alone, I would cook more... but whatever.

Today, I had a very easy but really good meal for me..

It was just some broiled chicken thighs.... not just broiled, but basted with butter!! YUM.. almost as good as charcoaled grilled.. so good..
and some mashed potatoes and corn.... just simple, easy, comfort foods... but so good....

Artie (Cat)  is still hanging in there....has had a lot of issues, but is still around..

OMG.... I sound so pathetic... sorry... today was a good day...

I think I am going to try to go back to the diet I had last year.. so I will be subsisting on salads...sigh...

Just wanted to touch base and let you guys know that I am still here and lurking.. Love & ((hugs)) to all..

Oh Cindy, please stop by here, even when you just do a fly over
visit.
With Lent coming, that would be a way to give up some things to start a diet. Tina asked me what I was giving up, and I said ..."CHICKEN".

And don't worry about not posting much about your meals, Cyn. Like I've mentioned, the hardest thing for me is coming up with the idea of WHAT to cook. The cooking part is easy. And as hard as it is to come up with an idea of what to cook for two, cooking for one is even more difficult.

But I appreciate you stopping by to say "Hi" and let us know how it's going for you and Artie. You know we're all interested!

Yes, I am giving up stuff for Lent.. Just enjoying the last of stuff...purging the cabinets, so to speak...

That is how I started last year.

Yes, Beth, it is so hard to cook for one person; and to buy things in a one person size. Even when I do cook, I end up with a lot of leftovers. Sounds good, but I am not a leftover person. If I had a free standing freezer, it would be different.

For Lent it will be:
lots of salads, chicken, green beans, green tea, nuts, and some protein shakes.. and apples.. strawberries, blueberries, etc... yuck.. but it has to be.

Feeling a bit better about things because Artie is a bit improved. Found a new Vet, father away, but excellent, who is willing to work with us, and not react and add more meds.

Artie has been very sick, to the point where I thought I would have to put him down on Christmas day. Really bad again at the end of January, where we were treated poorly at he hospital. That is when I said I need to change Vets and hospitals.

I belong to another forum (Cats) where one member offered to help me get an appointment with her cat's specialist. I had to wait a month, but it was worth it!

Had the appointment last week. Walked out of there feeling as if the weight of the world was lifted off my shoulders.

that is my update...
I have a lot to do today.. and tomorrow is Ash Wednesday.. busy during the day also.. helping them at noon Mass... and probably helping at a lot of the daily masses also..

Artie is doing really well.. I think while I was waiting for the new Vet appointment, I got his meds straightened out, on my own..

We are just waiting for his echocardiogram before we change his meds around.. perhaps eliminating one or increasing one, or whatever the New Vet wants to do.. He is a specialist, in internal medicine, and very well known..

Artie has a heart murmur. He has always had one. He did have a echo when I originally adopted him because I needed to know what was going on with him, in 2012.
He has a functional heart murmur.. like humans. I am not worried about his heart at all. He has been on steroids for 2 years. Steroids can wreck havoc on the heart. We just want to know what it looks like and proceed from there..

I will be so happy to change his meds around. He is on too many of them; even the new vet commented on it. He may also end up with a partially new diagnosis also. So I am very happy about the new Vet and the hospital. You cannot get any better. It is a long commute, and more expensive but it is well worth it... will just diminish my savings even more..

Artie just had the zoomies around the house.. and we played 'chase' for a while.. just like his old self.

For Supper, I have a pot of chicken soup cooking. Yes! Chicken !!
Breast blanched, then diced, cellery, onion, corn, carrots, and broccoli that was left over from last night. I guess some kind of noodles with it.

Glad to hear you're feeling better about Artie's care, Cyn. One always feels better when you can see an obvious change (for the better) in how he's feeling.

Dane wanted burgers last night....but I didn't have any burger patties in the freezer ~ my mind must be slipping far, far away. Normally, when I use the last of the frozen patties I write it on my grocery list.

UNLESS, OF COURSE, A CERTAIN MR. AMAZING THAWED THEM AND COOKED THEM WHEN I WASN'T HOME!!!!!!

That's what happened!

Oh, well, TODAY was $2.99/lb. fresh ground beef day at Fresh Market. I got 5 pounds of really fresh ground meat. I ended up with 10 - 6 oz. patties in the freezer and 3 patties to go on the grill tonight.

Fresh red beets & tops and boiled potatoes (because I WANTED them!) made the burgers a meal.

I most certainly didn't miss seeing the meatballs either.

The sauce on the spaghetti, is exactly how I eat my spaghetti. Not over sauced.

I made a ham & asparagus frittata for supper tonight.....easy, light supper.

Just as we sat down I saw that my sister-in-law had called my cell phone so, figuring it had to be an emergency (because we never call one another), I called her back instead of taking a pic of our supper. Turns out it was just an update on my nephew's upcoming wedding.

Anyway, supper was good and he thought it was good to just have a protein packed meal with no sides. I thought about making a salad but decided I didn't feel like going to that much trouble ~ LOL
