Looks great, and what we were supposed to have tonight.... BUT.....
Tina and I looked at each other, and burped at the same time.
We opted out of the hot dogs, and went for the leftover beef vegetable soup.
Had it with everything bread from Walmart. Slathered with butter...

I said to Tina, "There, see, we need a cleaning out!" That's why I suggested the soup & the butter. I was in no mood to grill the hot dogs today.

BTW....you should see how we discus What to Have for dinner in the morning. This morning Tina brought up the Question as I was folding hot cakes to fit in my mouth, and trying to keep the butter on them; whilst the heavy syrup was dripping on my chin. That's when the hot dogs suggestion came up.
And I had 8 4" hot cakes with two big scoops of Breakstones Whipped Butter, and floating in syrup.

I know, I KNOW.....not exactly the low calorie fare I said I need to eat.  But, that's life.  Sometimes plans change and you just have to roll with it.  I did pick up the low fat Nathan's hot dogs (97% fat free).  I've had them before and they really aren't much different in taste than the regular ones, IMO.

So, my potato salad is made.  It's about half & half potatoes and eggs/celery/carrot.....lightened up where I could.

Maybe tomorrow we'll be better.....

Nobody is keeping score, so don't worry about it. I don't blame you for making what Dane asked for. He so seldom makes a request about what he would like to have, I'd have wanted to make it, too. I adore potato salad but rarely make it, as Brian doesn't like potatoes. I could make a meal just out of the potato salad!

We weren't that hungry tonight and I couldn't seem to get going, as I fell asleep in the afternoon sitting on the sofa watching television and I woke up groggy as I usually do if I nap in the afternoon.

We had a decent size piece of the smoked eye of round left so Brian sliced it thinly and I made some beef au jus and heated up the smoked beef in it. I toasted some bread and then spread some beef in two piles on a big plate, one sandwich size for me and one spread out with more meat to fit Brian's sandwich, which he wanted open face.

I was too lazy to even slice some onion so I just got out some nice sliced Swiss cheese and put three generous slices on each pile of meat! Nuked them for a minute to melt the cheese while I put mayo on the bread. Put some black pepper and some of that Citrus A'peel seasoning on it and then proceeded with serving both of them. We had leftover pasta salad but neither one of us was hungry enough to eat any.

I think it's the heat, though neither of us spent much time outside. But, man, it was hot and what I call "dishrag humid" -- walk outside and it's so humid, you feel as if you've been hit in the face with a wet dishrag! I felt sorry for the workmen who worked in the sun of our backyard until mid-afternoon. They were both soaking wet all day long.

Taco salad for supper.....I've got everything ready to go and now I'm STARVING! I had exercise today at noon so when I got home at 1:00 it was too late for me to eat a lunch so I just started prepping for supper. And now it's 3:30 and I'm ready to put everything on the table......but I'll be patient for a while longer.

I've got some romaine and the last bit of iceburg lettuce chopped and ready. I think I'll mix some taco sauce (bottled) with a tiny bit of Catalina dressing to give the lettuce a bit of flavor. That was the old 'secret recipe' I used back in the 1970's when I started making taco salads. It's the sweet/spicy taste that compliments the meat and crunched up salty chips.

For toppings I've got tomatoes, black olives, sour cream and from the hidden recesses of the refrigerator.....some hot pickled peppers. I had forgotten about them and they are so spicy....good stuff! I thought I had an avacado but I must have been mistaken....none to be found. But it'll be just fine with what I have.

Gee, maybe it's 5:00 someplace ~ I think it's time for a cocktail. LOL

DD was over this morning, and brought a 1/2 ring of smoked Kielbasa for us to try; from a butcher shop in Chester.
I boiled it slow simmer. I figured some baked beans, and cauliflower leftover.

OK, I held off until a little after 5:00.....I couldn't wait any longer.

I told Dane to come to the kitchen to fix his salad, I had all the fixin's on the countertop. First crunch up as many tortilla chips as you want. Then top with the sweet/spicy dressed lettuce. Take as much warmed taco meat as you like. Then, the toppings....tomatoes, onions, pickled hot peppers and black olives....top it all with a squeeze of sour cream I put in a zip bag.

It was not too chewy but it depends on how it's cooked. If it is medium rare, it isn't very tough but if it is cooked too much it will be very tough. You can either slow cooker it for hours or grill it for a few minutes, nothing in between. This was cooked for about 30 minutes.

I know Tina makes beef stroganoff with chuck steaks, but like you said, she cooks it a very long time to be sure it is tender....

Norm, your Cuban style chuck steak looked absolutely delicious. I love chimichurri sauce, too.

The lady who cleans our house came yesterday. She'd been sick for a while and really moved slow yesterday, poor heart. I tried to convince her to go home and come back another day once she finished cleaning upstairs but she said she just wanted to take a break for a while. So she and I sat in the living room and had some raspberry tea and just gabbed a while.

By the time she finished up, it was 4 p.m. and too late for Brian to begin the paneed chicken that he wanted to make (of course, with the requisite tarragon cream sauce he likes so much). So we decided he'd make a run to a Chinese restaurant not too far from us for dinner. We got some beef pho and an order of egg rolls and some pork fried rice. The pho is so filling (and so delicious!) that we just got the fried rice for another meal. But an egg roll each went down just fine. I love slathering mine with the Chinese hot mustard!

The Cuban style steak calls for chuck eye steak but the guy behind the meat counter didn't know what that was so I got a small chuck roast since that was all he had out. At the time I couldn't remember another name for the steak but he surly wouldn't have known it either. I looked it up and found chuck fillet and chuck tender steak are other names.

I am house/pet sitting and field hand for my sister. I have been cleaning out her pantry(s). She has a husband who is a bit of a hoarder and won't let her throw anything away, so she told me to clean out the expired food and make sure the trash people pick it up before they get home. Her husband will start digging in the trash and pull things out. My biggest find so far expired in 2001. Then I found something that looked like petrified prunes but I know that isn't what it was. So, I have nearly filled the trash bin to the top. I hope I can get it out to the street for the trash truck.
My sister called from Italy and said it was blazing hot and her feet had blistered. Then she said they ate in a Michelin star restaurant. It was wonderful. When she gets back I will find out what she dined on.

I will look in the freezer, and if none, then it will be Tube Steaks (hot dogs).

To the best of my knowledge, the difference between a roast and a steak is how big it is. A steak is an individual slice off of a roast. Of course some steaks are shaped like tubes.

I can find chuck steaks here on a regular basis. I usually pick them up for beef stir fry if they are well marbled. They usually have good flavor. I would think a London broil would also work for your recipe, Norm, if that's something you can find in your area.

Another poor choice for trying to cut back, but it's what came to mind when I had squash to bake....

Baked breaded pork chops with spaghetti squash for me and acorn squash for him with some steamed broccoli to give some color to my plate......
