I was wondering if there are others here who like rhubarb as much as I do? If so, what's your favorite ways to prepare it? I enjoy pies, assorted jams, iced tea, lemonade, a "crunch" as well as a crisp, and also a torte.

My first pie of spring was always Rhubarb Custard Pie....our rhubarb grew around a telephone pole out by the barn and when it was large enough to be pulled (you pull rhubarb, you don't cut it) the first thing I made was the old family recipe.

I can't get to my recipe right now (it's on the sick pc) but when I get it repaired I'll post the recipe. It was easy (used canned evaporated milk, sugar, eggs....and always a lattice top on the pie).

Then, of course, there was the rhubarb sauce (just like applesauce, but rhubarb instead of apples). Super easy and really tasty. No recipe, just cut up the rhubarb, add sugar to taste - LOTS of sugar - and a sprinkle of cinnamon or nutmeg, whatever you prefer....a tiny bit of water and simmer until it turns to mush. Done. Cool, put into containers and freeze for the long winter months when you want a treat.

I've never even tasted rhubarb. The first time I ever saw it, I was in a grocery in Chicago, and I asked my friend, "What is that stuff that looks like orange celery?" I have never seen it in a grocery down here, ever.

Michelle, you don't know what your missing! But, rhubarb is very tart, and when I was a kid, my sisters and I would dunk it in sugar before taking a bite. And it's also good dunked in flavored dry powdered gelatins.  

When I was growing up, my mother never made pies nor jams, or other desserts with it, but then I don't know how much she had to work with, but I do remember her making that rhubarb sauce as Beth has stated. I never cared for the sauce, but I love pies, jams, iced tea, lemonade, crisps, and the "crunch" (which is a lot like a crisp).

"For the life of me", I could never get rhubarb to grow, but my daughter Jenny has good luck with hers', and she always shares hers' with us. I so look forward to when Spring is here, as I know the rhubarb will be ready to pick shortly after, and I can't wait to make those pies, jams, and those other desserts.
