The store has some nice meaty smoked ham hocks so I combined them with the leftover Easter ham bone, navy beans and collards for dinner later today. OH also had cornbread, ya all.

Yeah! when Tina sees those she screams...get them out of here.
She even freaks out when she sees bullets.

I tried to tell her...it's for safety. Even though I shot up in the air to scare it, it bit her on the leg. LOL... Not bad, but enough to raise some welts.
The Dr. at the ER was looking at me like I beat the dickens out of her.
We all laughed on the way home though..... haahahahahahah

Now all I have to do, is fix the hole in the ceiling. lol!

An ordinary garden lizard bit Tina? Never knew they would do that.
A hundred years ago we had an iguana living in the yard. My mother almost passed out when she saw it. It was hanging in a bush right outside our dining room window.
I remember one time the family had gone to Santa Monica for something. We parked right in front of a store that was a reptile dealer. The entire front window display was full of lizards. My mother caught sight of one of them smacking down on a fat mealworm and went over to the curb and lost her lunch. It wasn't funny for her but the rest of us almost peed our pants.
I have been on the annual snake watch. About this time of year those gopher snakes appear. They are huge. About 8 feet long and they curl up and hiss.

We normally grill steaks but Brian hurt his back and is taking it easy after having a procedure done on his back on Monday. He isn't eating much either so we decided to split a huge steak I had in the freezer. It was a huge 1-3/4-inch thick ribeye that I'd gotten at the Gourmet Butcher Block with their special seasoning/rub on it. It weighed a bit over a pound and a half. The reason we only had one is because we split the last one, too. They're not cheap but they're the best rib eyes we've ever had.

I used a cast iron pan, got it blazing hot and seared the steak about 3 minutes per side in a combo of olive oil and clarified butter. I also held up the steak with tongs to sear the sides, too. I threw in about 3 cloves of smashed garlic along with some fresh thyme and rosemary sprigs from the garden. When the garlic started to brown, I put it on top of the steak so it didn't burn. Then put the whole pan with steak in the oven at 375 for about 5 minutes until it was about 120 degrees on the Thermapen. While I let it rest for about 10 minutes, I put 3/4 cup of a good Cabernet Sauvignon in the pan along with a teaspoon of Better Than Bouillon Beef Au Jus and deglazed the pan and let it reduce a bit prior to pulling out the herb sprigs. It came out a perfect medium rare and the pan sauce was delicious on the steak and on the mashed potatoes we had with it. Made a very small salad with some butter lettuce from the garden, too (LOVE growing lettuce!).

Brian could not believe how good it was (we ALWAYS grill a good steak). Good substitute for grilling if you can't grill.

I didn't know there was a Better Than Bouillon Beef Au Jus. Obviously you like it or you wouldn't use it. I have to give it a try. What else do you use it for?

I think iguanas are adorable, but I've never lived where I had to share space with them. I saw them in Mexico many years ago and one up close here in Niagara. There was one in a butterfly conservatory for about 4 years. It had been someone's pet, got too big, so it found a home in the butterfly place. Beautiful, bright green and magnificent. Unfortunately, it became quite large, territorial and started hissing at people, so it is now in a zoo. Stupid people who make pets out of these creatures and then don't have space for them.

Today... ?? we shall see. I suggested, hot turkey, stuffing and mashed potatoes, and vegetables; all cooked from leftovers, and heat it all up. I will have ham instead of turkey.

Tina went with my son & DIL to get her ( as she calls it witchy ) hair cut. I told her, if you cut that much ( above the shoulders ), you will be mad not being able to tie it in a pony tail. LOL
Come to think of it, she does look witchy; sort of. She started that...."Oh you men don't care!"
She is right .... At least I am one who doesn't care! ... I say,"cut it, wear it; color it whatever makes you happy!".....

Do you really think the turkey is safe to eat?

I realize you have a great refrigerator, but 6 days later?

I only keep left overs 3 days...and then I toss it...

I do not want you or Tina to get sick...

I can't get pictures to post from my phone camera to myedmail so I don't have pictures but I made a roast chicken that was glazed with soy sauce and honey, then put in the fridge overnight to dry out the skin and make it crispy. We also had left over green beans and a dessert made with a flour, nut and butter crust, chocolate pudding and whipped cream with sugar and cream cheese.

I checked it, and tasted and smelled it. All ok, not sticky / slimy just ok to eat.
I did think of it....thanks.
The fridge is set a 37 degrees in the one drawer. It keeps food fresher for days after expiration date.
Turkey.... 5 days and its gone as far as I'm concerned, but 6 days is the limit.

When Tina was little, her grandmother would make a big pot of chicken soup, and that soup stayed on the top of the coal stove / oven, until it was gone.
She said, there was green mold on top, and all she was told to do, was scrape it off, and take the soup and chicken underneath. LOL ....Can you imagine that?

I think that many times in the last few years we have become way too concerned about cooling and cleanliness. A few years ago I started to put cooling packs into hubby's lunch for on the construction site. He asked me "what's this for?" I told him all about his stuff getting too warm, etc. etc. He said "How many years have I been taking my lunch to a construction site, and how many times have I gotten sick from it???" I said that I'd been packing it for over 40 years, and no, he never got sick. Maybe we were just lucky!

Chicken Parm for Dane & Jim to increase their protein intake and as low carb as I could go.....Just did s&p on the split breasts & sauted to brown a bit. On to a sheet pan with a bit of marinara, topped with shredded block mozzarella and a slice of 'fresh' and a grating of parm, fettuccini with sauce, green beans and a tossed salad. It's been a long time since I've made two family meals for six people. I kind of got use to cooking for two....this week has been more challenging than I would have imagined! LOL
