I just realized we didn't have a dinner thread started and it's one of my favorites "go to" threads for inspiration when I'm in a cooking funk.

So, here we go -

I had thought about going out to eat but nothing sounded good. I was going to fix a nice Bloody Mary (like I don't do that on a regular basis....) and when I opened the freezer to get my vodka I saw a zip bag of taco meat. Well, what the heck, my mouth was suddenly watering for a nice taco salad. I didn't have any tortilla chips in the pantry so I just sliced up a huge bowl of romaine, added the thawed and warmed taco meat, tossed on some chopped sweet onion, grabbed a handful of grape tomatoes and topped it all off with a few nice "blobs" of sour cream. My mouth was so excited about the taco salad I even forgot all about making that Bloody Mary! Hahahaha

And because I didn't even think about grabbing my camera, well, I'm gonna cheat and post a previous pic (this one did have crunched up tortilla chips....)

aw, man....YOU had avacados!

I don't think I had enough fat in my salad tonight, I ended up having a snack of 1/2 an apple cut into slices and slathered with some Philly Whipped Cream Cheese.

I bought 10 for the guacamole & didn't need that many.I saved the pits lol. lets see if one will grow.

I think Norm has one growing at his kitchen window....if I remember correctly, he said it took something like 3 months to get it to sprout. But, hey, maybe you'll get 'em all to sprout and you can plant them outside like a hedge. Wouldn't it be neat to go out and pick an avacodo to bring in for your supper?

But, then again, when you get them for 10 for $10, who needs that growing in the backyard messin' around???

It did take around three months before it sent down a root and a little stem. The really hard part, after all that time and another 5 or 6 growing it, was to cut it off so it would branch out and not just be one stem with leaves.

It looks great, Norm. I haven't sprouted an avocado seed in over 25 years! Once when I did it -- in a glass of water held halfway out of the water with toothpicks in a dark area -- I inadvertently put the seed upside down in the water. The funny thing was it sprouted anyway and the "stem" turned up and came up out of the water. I've never planted one in the ground here, though I assume our climate would be okay if it's protected in a freeze, which are pretty rare in N.O. -- none this past winter, in fact.

You've inspired me to try again, Norm. I'm laughing as I don't remember having the guts to cut the stem, though...

1 pound boneless skinless chicken breast cubed for skewers
2 cloves garlic, minced
1/2 teaspoon lemon zest
1 tablespoon lemon juice
2 teaspoons fresh oregano, chopped
1 teaspoon fresh thyme
1 teaspoon salt
1/2 teaspoon lemon pepper seasoning, optional
Oil

Tzatziki sauce ingredients:

1/2 cup grated peeled cucumber (seeds removed and juice drained*)
1/4 cup greek yogurt
1/4 cup sour cream
1 tablespoon chopped oregano
1/2 teaspoon lemon zest
1 teaspoon lemon juice
1/2 teaspoon salt

I thought I posted a response to you Crybaby but it isn't here. I said I put my seed in water with toothpicks but didn't put it in a dark place. Maybe that is why it took so long for it to sprout.

I ended up creating a Faux Quiche in a Spaghetti Squash crust. It was time consuming but a lot of fun to make. I posted the steps in Cookingirl's Spaghetti Squash thread.

Wednesday New Post:

Today was Dr's Day for both of us. Messed up the day for sure

Supper and Lunch was scrambled eat what you find.
I had three pierogies that were left over from what GD couldn't eat!

My BP is way too high ... 170 / 86. Doc wants me to lose some MORE weight. I told him it would be a snap; because I can now eat salads and peppers and grains and such that are lower calorie.
He increased my meds..so hoping that will help.
I feel oK and figured, hey! thats what keeps me going, so why worry about it. LOL
My motto is,"Leave Well enough Alone!"

I think you can go in and edit any time and erase the duplicates.

Barb, your supper looks super fresh and appetizing! Your tomatoes look like homegrown!

I don't know if I'd be able to use a full Tbsp. of fresh oregano, but maybe your variety is milder tasting than the one I grew.

I love to eat the Tzatziki sauce with celery and carrots as a snack.

Wow, technology is amazing! Remember when we played around with the Instant Poloroid cameras and had them laying all over the living room before peeling the picture off the backing?

I think most of our wedding snapshots were taken with that camera....lol

Funny you should mention that Polaroid tonight Beth.

I was in the closet that Tina just cleaned out, and there it was...the old polaroid camera. Not the Plastic one. ( we have that one too) but the expensive metal heavy one. With the bellows and the timer to time the 60 seconds to develope the color film etc. I said to Tina,"What the heck are we saving this thing for?" She said,"If we turn it in, they will give us a discount on the new style camera!" I was like...Befuddled!!! LOL

Then she said, Some day it will be an antique!" .... Yeah! I Said.... Like Y O U ! ... Silence!!!

Jimmy, don't throw it away. It's worth a lot of MONEY! Go do a search on eBay - if it is the one with the bellows and it is in good shape, it can bring as much as $900.

I was in a meatloaf mood so we had that tonight with mashed taters and white corn. Loved it!
