Wow! October allready!!! Time waits for no one....

So OK..... Cooled down here, and Tina made a great suggestion, to have Chili with Beans; over spaghetti. Sounds good to me. Easy to make too.
Only thing is, I will add the sausages we had the other day. I will finely chop them up, and add them to the chili beef.

The thing is, when I eat chili, I like pieces of whole tomato added to the sauce.

I also do not like my chili too thick.

I just thawed out a couple (boring) pork loin chops. I think I'm gonna let them braise is some cream of mushroom soup w/white wine in hopes they will tender up a bit and get some flavor. Then I'll add a scoop of Stovetop Stuffing. Sounds like something different for supper tonight. I've got leftover squash and I bought some frozen flat Italian green beans since Jimmy & I talked about them last week. I've been hungry for them ever since he or I mentioned them.....LOL

Hey, Jimmy, I saw (and bought) a can of the Golden Mushroom soup today. I know you said Tina uses it for something.....is it Susan's Meatballs? Remind me, please.

Yep! ... Susans Meatballs .... I think she adds a 1/4 can water with the golden soup, and when she uses the regular one, she adds like a 1/2 can of water to each can of soup.

OK, Thanks! Next time I make meatballs they'll be turned into Susan's.....this is the first time I've ever seen that type of mushroom soup.

I meant to buy regular cream of mushroom soup to cook my pork chops in tonight but ended up finding I had mushroom chicken cream soup.....never heard of that before, either. But, I'm sure it would be fine since it's just thinned out with some white wine and chicken stock to turn into a gravy to help break down the loin chops.

Everybody is out kayaking today. Then they are going to stop at the Crab Cooker for a meal. I have been playing around with hamburger meat. Do you like a crust on your burger meat? I do and most of the time I can't get one. I watched a video on YouTube and gave the technique a try. Well, it worked and I had a very flavorful burger patty. It was well done but that is ok. We don't eat pink ground beef after that e.coli outbreak in Seattle. Too risky. My whole house now smells like hamburgers.

I make butter burgers on my grill....on a griddle.  Super good with that crust on the edges.  It's like a flat-top burger made at a diner.  I usually use ghee or clarified butter on a super hot griddle then put on a ball of ground round (brought to room temperature works better than cold).  As the meat starts to sizzle I mash it down into a patty and then let it crisp up.  One flip and a little mush to get it have a good connection to the hot griddle and let it be until it's done.  The main thing is to have that griddle screaming hot and let the meat alone once you mash it down.

If you like cheese on your burger you can always add a pile of shredded cheese on top of the patty after the flip and then put a bowl or lid over to create some steam.  The cheese melts into the patty and then gets crusty all around the edges.  Fold the browned, crusty part back up on top of the patty and you're done!

You have brickets (SP) in your grill or is that charcoal ..?


Mine get crusty when I use hot CI.I do one side then turn off the burner . It is still hot for a long time so the other side gets cooked.

I also use a CI on my Weber Q after I have cleaned it,so not to get it all greasy lol.PIA to clean...

We had some corn left over from a meal Cassie made and a lot of bacon left over from something I made plus some ham that had been in the freezer since Easter, so I added some potatoes, onions and cheese and made some chowder.

That is pretty much exactly what they said. What a difference it makes in the flavor of the burger. And I love that brown cheese. I did mine on my cast iron griddle on the stove.

That's a pic of my old grill when we lived in Ohio.....lava rocks over the burners and then the grill grates. Loved that grill.

The reason I did the butter burgers out on the grill was so I didn't have the mess on my stove ~ lots & lots of spattering, but the taste of the crisp beef is so good. It's even better when I grate frozen butter to mix in with my ground beef and then on to a dry hot griddle pan. I just put it on the grill grates and turn it up to high. Amazing how the grates get cleaned from that pan being on top to hold in the heat and burn anything off the grates.

Hey!.... Anyone ever make open faced grilled cheese in a toaster oven or a broiler, so that the cheese bubbles and browns and crisps over?

I just take a slice of bread, and put a slice of land o lakes cheese on top, and turn the oven on broil. Ummmmmm!! And the house smells so cheesy good.

Thank you for the great support Beth! ... I'm not putting a feather in my cap, but I do try. I even refused a beer or a soda / pop of ginger ale, and I opted for water instead.

Roomie and my DH came home reeking of garlic. I can't stand to be in the same room with them. One had scampi and the other had mussels. They can scare off a whole army of vampires.

Well jimmy I am right with you. My dr. Appt was not great. I am back to the low carb diet big time. Insulin pushed up. Till my numbers come down. A1c is 7. I will be eating veggies and eggs lol I made some jello and can have real whipped cream... I can do it. Bacon and eggs in the morning.

So Barb.... help me here. In other words, I can have bacon and eggs in the morning??..... or an omelet?
What about toast. Can't eat eggs without a little bite of toast.

Well yes you can but you have to watch the carbs.sourdough,whole grain,dark rye.full fat not low fat.all proteins.meats,fish,seafood not breaded,pork,poultry.most veggies.No sugar.keep a count of your carbs count.portion control. I have to go cold turkey lol. Oh yeah butter!!!
