I keep wishin' you'd move in next to me....between the 2 of us we'd only have to cook 50% of the time! Looks good !

*******************

I had some leeks I wanted to play around with. Caramelized them in a very little bit of butter, then, just before supper I reheated them and added about 2 Tbsp. of heavy cream and the same of half & half. Turned into a wonderfully tasty cream sauce to spoon over my grilled chicken and sauted snow peas. I mashed the second half of the butternut squash I baked last week as my 'starch'.

My mother always cooked her okra whole.
I tried the cotton candy grapes. I didn't think they tasted like cotton candy but they were very sweet.

Yum Beth.

Our dinner tonight was Spencer Steaks with adobo and chimichurri sauce, fried sweet potatoes with ranch dressing, Spanish rice and store bought snap pea crisps.

I'm gonna eat what Barb eats from now on. How's Zat?

Today was one of those nightmare morning / days. T's uncle called at like 735 am, and said he called 911 for his wife. They are both 93 y/o, and she was having trouble breathing.
Tina rushed out and fought the East Bound rush hour of hell.

All went ok at the ER, and they are removing fluid from her lungs; after they admitted her.
Tina is home now, and she had a corn dog. The girl next door made supper for me.
Two knockwurst and two pierogies. ( I didn't eat the pierogies ) A curry sauce that was delicious.
I ate the fried sauerkraut that was left over. 2 slices of thin whole wheat bread. Normally, I would eat 6 or 7 slices, and buttered too.

For Gabe, I made him a frozen breaded tillapia, baked in the toaster oven, and mashed taters and beans.

Quite a snazzy supper. The beans look great. The creamed leeks must have been really flavorful I'll bet!

Soy-ginger salmon with a green salad tonight. I tried a new burger recipe from Epicurious which was only meh.

I want to thank you Norm for mentioning the O.M. liver cheese slices. I bought some and they taste pretty close to my old O.M. liverwurst.

I hear ya Barb!.... Well....haha unless its cauliflower crust! LOL

Well, Tina was up early, and stuffed nice red bell peppers ( are ya hearin this Barb? ) for supper tonight. I am going to enjoy them, and I do not need bread to eat them.
All I need to do, is pop them in the oven at around 4:00 PM.

I am going to fry the okra today though.

Then she made us tuna salad for sandwiches. She put celery in it besides the onion; because she is bringing a sandwich to her Uncle while they check on the Aunt who was hospitalized yesterday!

SOoooo! I am baby sitting again today. Grrrrr!!!

The cast aluminum griddle went on the hot grill grates & I made butter burgers. OMG ~ so good! I cut up a bunch of vegetables and made an Orzo Pasta Salad with a simple Italian dressing I threw together.

Looks like a Beth Butter Burger, and looks good!I made / fried the okra. It came out good. I left them whole though.
One broke open, and sticky stuff started leaking out. I figured to fry them whole. I like the buttermilk corn meal / flour recipe. They are a little crunchy inside, and good.

I took pics, and will upload them later.

Ok... here are some pics of the Okra, and the stuffed peppers.
Gave the rest of the okra to the next door neighbor with two of the stuffed peppers.
She called and said the okra was fantastic, and this was the first time eating it.
