Growing up...it was always in a piece that mom had wrapped in waxed paper. The waxed paper would be the barrier between the cheese and the hand.
Dad didn't give two shlipps. He would just grab the cheese, and grate the cheese without the waxed paper. Don't forget though!...Mom wasn't there some times to see when dad violated her rules about cleanliness, and he would never do that if she was there watching.

Today, we have the ABG All ready been grated and the solid chunk. We just use a paper towel to hold it with while we grate it.

I cut off the rind and use them in soup.I grate as I go.Yes I find the cheese is hard to hold.Might have to use paper towel next time.

I have a rotary cheese grater a lot like this one that I use most of the time for Parm. I cut off a chunk and put it in the hopper. Sometimes I put it on the table for people to grind extra if they want it.

I have one of those old Moulinex kitchen shredder / grater / slicer machines from the 50s and 60's that
you turn the crank handle. comes with 5 different discs.
I bought it on Ebay years ago.

My aunt gave me one of the Moulinex ones, too. It has a bunch of different rotating grating thingys, depending upon what you want to grate.

I have an old tin one similar to that type with a couple of choices as to size.  We buy the already ground (not shredded) but always have a chunk of both Romano and Parmesan in the fridge.  I like to use the rinds, too, on top of salads and homemade soup.
