I'm getting an early start on our New Year's Day supper. I wanted to do something with the can of black eyed peas that was a little more interesting than opening the can and heating it up.

I decided to spice up the dish with a can of diced tomatoes w/peppers (similar to Rotel Tomatoes), some bacon and a bit of chopped onion.

I'm going to pair it all with a bit of white rice to go along side my collard greens.

At this point on time ,I have no idea what I will be fixing.Not collards tho lol.Still trying to unpack my car..so I can go food shopping.

OK, so I've 'taste tested' my black eyed peas about 5 times.....hopefully there will be enough for the two of us to eat when I put it on the table. I cannot believe how good they are with such simple ingredients - bacon, onion, Rotel tomatoes & canned black eyed peas, simmered together until all the flavors meld together.

I decided to use more bacon to start my collards ((that are all cleaned and ready to cook)). I must be on a 'bacon fix' today. I'm rendering the fat out and when the 1" pieces are brown & crispy I'll remove them and use the fat to soften my onion & red pepper flakes. The bacon will get added back to the pot when I add the collards and it will all soften up and mix in without being obvious. I also have some ham to add so we have a good amount of protein ~ that's just an excuse for the salty goodness to go with the greens!

I went to bed at 3 AM ... Tina was asleep in her EZ chair when the Ball Lighted up in Times Square. I even missed it because I was downstairs looking for tomato sauce.
I came up, and I heard... Happpy nnneewwww years come from Tina / half asleep. I diddled in and gave her a quick smacking kiss. ( On The Lips Too ) Wow!!! And with a Sound!! We're learning to be like we were 40 again.

Tina's in the Dining Room watching the Jackie Gleason "Honeymooners" Marathon.

She was supposed to make a Cheesecake for dessert, but I don't think that is gonna happen! Sleep

Supper is cooked.... Just have to boil the macaroni's !! .....

Beth...they sound great! I love greens like you do. Tina is so fussy unless it is canned spinach!
Those Rotel tomatoes Are great! I love them! Another great thing I found, is those Canned Stewed Tomatoes. The "Dell Monte" brand I found is the best.
The celery and onion flavor, and just the right amount of sweetness.
Great to use for like shrimp or fish dishes. I use a can (15 / 16 oz.) in my spaghetti sauce. I do puree' it though for that!

The Dell Monte I found has the best nice red tomatoes, and not that many seeds.
A bit pricey if not on sale though; but Tina watches the prices before she buys.

Another one; believe it or not, is Walmart Brand (Great Value ) Diced tomatoes.
They are not that many seeds, and they are firm little perfectly diced pieces.

I made Omelets a few day's ago, and I wanted Tomato diced. We had No Fresh Tomatoes. Darn it, I said! ... I opened a can of the diced walmart ones, and drained them and placed them on a paper towel for a few seconds. They were just as if I diced a fresh tomato. They were perfect! ....

Agreed on the WalMart (Great Value) brand diced tomatoes. Their diced tomatoes with chiles is a match for Rotel at 1/2 the cost on sale. Today I'm using the WinnDixie store brand ones that were on sale ~ REALLY cheap. Again, a match for the taste of the Rotel.

I do have 2 cans of my favorite Red Gold brand diced tomatoes w/chiles in the pantry. I'm saving them to use when I make my (faux) Jambalaya.....which will be real soon, I'm sure.

I just tasted the greens - still have a bit longer to cook but the taste is good for me! Yum.

Here are the greens, ready for the pot. Who else still uses their Tupperware Big Green Bowl? Man, I'd be lost without it in my kitchen.

OMG ~ I had a HUGE amount of collard greens to cram into that Dutch oven. Now, it's just a 'regular meal size' serving......guess I won't have as many leftovers as I anticipated!

It's gonna be good from what I can see!
Tina said, "We got our big green tupperware bowl." We also god a couple older ones that are the old style, and I have them marked ( Not for onions or garlic...Dough or cookies only ).
That being, that it takes forever to get the smells out of the old tupperware.
Even with lemon scented dish washer granules.

Tina likes the really big red one with the handles on the side, and the white top.

Which reminds me, to go look for the mustard and ketchup pump bottles. I / we hate the new squeeze containers that squirt out too much mustard.
Gabe always squeezes mustard out all over the place. i do it too, if I squeeze to hard.

I cooked a big pot of Black eye peas soup, I added bunch of veggies, carrot, peas and green beans, with lot of ham, the bone part too.. it's for our supper tonight, we always need a bowl of soup at late night to warm up the cold night

for dinner I grilled some Korean ribs.. they were a bit tough, IDK what's wrong, maybe the ribs, the flavor was right and very tasty.. I marinated them overnight with pureed apple + onion + ginger, soysauce, minced garlic, sesame sauce and brown sugar, the kimchi was good.. not authentic, but just how we like.. only sugar, vinegar and salt

Oh, WOW !!!

If today is any indication of the meals to come this month, well, we are off to a fabulous beginning of 2015!

Great job on the meals ((and pics)) to both Barb and Imelda. I could practically taste your food right through my computer screen.

Bacon-cheddar meatloaf, mashed potatoes made with cream cheese and sour cream, gravy and broccoli is our dinner tonight.
Our roomie is having a CMV flare so she slept for 21 hours straight. We ate hamburgers without her. When she did get up she and DH had a drink at midnight. One hour later she just fell right over, unconscious. Never seen anything like it. Thank goodness she had told us that the CMV causes cataplexy and narcolepsy or we would have called the paramedics. We just got her up and put her to bed in her clothes. Now I know what they mean by dead weight. She was heavy! So she slept from about 1AM to who knows. We'll see.

Well, it would have been scary if she hadn't warned us in advance. DH was a bit freaked but I told him it probably was the cataplexy and not to worry cause she partially woke up when we started to move her. She was able to tell us that is what it was because she had missed taking her meds for it.

Black eyed peas and ham hocks.  The ham hocks said Fresh pork on one label and another label on the same package said Smoked pork ham hocks.  It was too late to treat them as fresh so I went ahead and boiled them with the beans and they turned out very good.  Not too salty like they might have been if they were country smoked fresh ham.

Cheese enchiladas tonight with Barb's enchilada sauce and an avocado sauce similar to what they serve at El Pollo Loco.

I cleaned out the kitchen freezer today. I had all of these little containers of food that I neglected to label so I tossed them. I keep telling myself I will remember what is in those containers but I never do. There must have been a half dozen containers of mystery tomato sauce.
I have no problem with the fridge. After 3 days I toss it but occasionally something will get lost and I find it but don't have the stomach to see what it is, so I toss the container. I use those Ziplock twist top things so it isn't much of a loss. They have usually seen better days anyway.

The other day. we got a junk mail that Harriet Carter Gits & Doctor Leonard mail order have Merged! ...

I looked in the sales catalogue for those strap on Ice Grippers!
I can't believe they still have those things  In 1972, my mom slid on the ice stepping off a curb at a Kmart store. She sued the store for a lousy $263.00. Just enough $ to pay her Dr and an ankle cast on her chipped bone.

After the healing....it was spring time, but Tina bought her a pair of those Strap On Ice Grippers from Harriet Carter's ..... I think they were $4.99 + Shipping back then!.... Mom used them too, but the only thing, was the cleats would pack with ice, and then became ineffective, and actually were like grease on ice! LOL

I don't know, now maybe they are New and Improved??

They have them at Dr Leonards.... I may get a pair for myself and /Tina.

I reheated the chicken & dressing and green beans I cooked on Tuesday when Dane ended up going out to eat with the golfers....

It was amazingly good with a slow and careful microwave reheat and then a few minutes in the oven to crisp it up just a bit. Nothing so good as homemade dressing - don't need a turkey or whole chicken when just a breast or pieces will do!
